I think it depends on how you define 'zombie'. In traditional folklore, a zombie is a reanimated corpse. If you stick with this strict definition, then it is safe to say that no such virus could exist. The human body needs a functioning brain and functioning organs to survive; a virus isn't going to change that.
If you relax the definition of zombie to include more modern interpretations of the concept, which involve living 'infected' hosts, then this could be more plausible (though still highly unlikely). The movie 28 Days Later toyed with this concept, as did the video game The Last of Us. Both are far fetched, although there are examples of viruses and parasites in nature which have been shown to alter the behavior of the host.
