Giving evidence during the case, Mosley confessed to having had a penchant for sado-masochism from an early age, but dismissed any suggestion of a Nazi fetish or that there were any Nazi connotations. He said he could think of few things more unerotic given his family history.

why the sentence use "giving" at the beginning but use "given" for the final information?

The first part is the same as saying
When Mosley was giving evidence during the case, Mosley confessed ....

The second part
given ( a situation ) means
under that particular situation that is outside your control

In the context of the passage, Mosley was born with the family history. The family history was given to him, not something of his choosing, thus given his family history.

e.g.
Given that everything entails a cost, social assistance should be provided under strict scrutiny.

Giving in that sentence means "俾/交出證據",
given in the other sentence means "跟據"
