obviously that farmer was drunk and did not know his butt from a hole in the ground so saw a skinny Rhino (and also thought it was a horse)  "It was a grey horse like creature" is the verbal description" with a long pointy schnazola.  And from there the "story morphs on" with each retelling of the strange beast.(and embellished) Later it had wings and breathed fire and farted out gold.(also could talk)
