When ammonium nitrate is heated, it is decomposed (not destroy) into dinitrogen monooxide gas and water vapor.  The balanced equation is:
NH₄NO₃(s) → N₂O(g) + 2H₂O(g)

Ammonium nitrate under certain conditions decomposes into a series of gasses

2NH4NO2 = 2N2+ 4H2O + O2 .

It is the rapid release of these gases that produces the high pressures of an explosion.

Other gasses can also form under the extreme conditions .. NO2 and NH3 for example.

The orange red colour we saw in the Beirut explosion was due to the presence of NO2
