Right now he has 7 gallons of mixture, which is 3.5 gallons whiskey and 3.5 gallons fruit juice

He wants that 3.5 gallons of whiskey to represent 2 of 7 parts (because 2:5 means that you'll have 7 parts total) of the total mixture

2/7 = 3.5/x
x = 7 * 3.5 / 2
x = 24.5 / 2
x = 12.25

The total mixture will be 12.25 gallons

12.25 - 7 = 5.25

He needs to add 5.25 gallons of fruit juice.

Let y gallons be the amount of fruit juice needed to add.

At the end, Whiskey : Mixer = 2 : 5
(7/2) : (7 + y) = 2 : 5
3.5 / (7 + y) = 2 / 5
2(7 + y) = 17.5
7 + y = 8.75
y = 1.75

Answers:
He needs to add 1.75 gallons of fruit juice.
He will have 8.75 gallons of the punch at the end.

3.5 : x => 2 : 5

so, 5(3.5) = 2x

i.e. 2x = 17.5

Then, x = 8.75 litres

As there is 3.5 litres already, he needs to add 5.25 litres of juice

Now, 3.5 : 8.75 => 3.5 + 8.75 = 12.25 litres in total
