Mostly French, which is the only official language of the country.

There are surviving local languages, like Basque, Breton, Occitan, Alsacien, Corse in the mainland, as well as a few other languages in the overseas territories that I don't know.

A lot of people are able to speak a second (or third) language, so there are a lot of Italian, Spanish, English, German and Arabic speakers.

The two main ones are French the national language
and Occitan. A third one is Basque, which is spoken in the southwest.

They speak hundreds of different languages but only French is official.

French is the official language in France.  Some regions have a version of Creole that they speak, but most speak French as at least a second language.  Some French immigrants or visitors speak a foreign language, such as English or Spanish.  Less than 10% of the French speak German, Italian or Portuguese (mostly immigrants).  An even smaller amount of immigrants may speak other languages, such as: Arabic, Kurdish, Polish, Turkish, or Vietnamese.
