Chop up chicken & potatoes. Take 1 pack chicken rice mix. Add to & cook the rice. Add 1 fried egg on top for breakfast. Chicken rice with chicken in it & some other. is good for breakfast or lunch.
Chicken soup, or chicken pot pies, or tacos, nachos or quesadillas.
Make a curry. Chop up an onion and an apple and fry them gently, along with whatever spices you like, add in some apricot jam and/or chutney, and some chicken stock or water, let it all simmer for a while, then add the sliced leftover chicken and potato just to heat them through, and there you are. Cook some rice and a green veg to go with it.
Dice them up and make a hash out of them. Surprisingly delicious.
You can freeze it and take out as you want to use it like i like to use mrs.grass soups and just put the green onions cellery carrots all in containers in the freezers and use all as i need each with sandwitches witch you can do.
I have made chicken cakes much the same way you make fish cakes that is with bread crumbs and an egg and some seasoning and form them into round cakes about 3 inches thick and cooking with olive oil. You can make a potato salad from the potatoes.

If it was a whole roast chicken you made, strip off all the meat and set aside, then simmer the bones to make chicken stock. Then you have some great choices:
1. Chill or freeze the stock and chicken meat for future use
2.Recipes could be chicken rissotto, curry ( Thai style coconut curry is lush), chicken soup ( add some veg, maybe noodles or rice)- either way you use the stock and the meat.
3. I love chicken sandwiches with mayo, with sliced re-fried roast potatoes on the side!
You can do a lot of things with roast chicken. Remove the bones and shred it. This can be used in several recipes, such as wraps, a sandwich or a salad. You can also cook it as stir-fry with veggies to change its taste completely. As for the bones, you can prepare chicken broth with it.

Turn some of that chicken into chicken quesadillas, using sour cream, cumin, etc etc as desired.
Slice the potatoes and pan fry with a bit of onion, until they are crispy, adding salt and pepper before serving. Serve them with eggs and bacon at breakfast, or with supper.
Shred the meat mix with some enchilada sauce roll up a tablespoon or two of meat mixture in corn tortilla place in sided-oven safe dish, cover with remaining enchilada sauce and shredded cheddar -bake 20-30 minutes at 350.

You could make a chicken vegetable soup with potatoes. My wife will use the extra potatoes in eggs for breakfast and the extra chicken to make enchiladas for dinner.

You could use the chicken in a stew. The potatoes just keep in the refrigerator, until needed, max 3-4 days until required just reheat in the microwave, if you have a combination microwave reheat in microwave mode then use the convection mode to crisp them up. How long required depends on the power of your microwave oven.
