What gas is produced when food is put in a deep fryer?
In other words, what is the product of the chemical reaction between the frying oil and the food? When I’m frying tortilla chips, I notice that a gas is released and I’m curious as to what effects it may have on my body when I breath it in.

The gas is steam (water). It is produced just by the heat of the oil -- it is not produced by a chemical reaction.
It's steam. It's the water in the food hitting the boiling point and since steam is less dense than the oil, it wants to rise to the surface.
