"what I am today" is a nominal relative clause, which functions like a noun phrase (i.e. 先行詞 + 關係子句)
"what" = "the thing that"

You have made me [the thing that] I am today.
To be specific, people will often name "the thing" to say something like:
- You have made me the player (that) I am today.
- You made me the singer I am today.
- etc.

"what I am today" is the noun complement of the object "me".
