Some DVD's are +R and some are -R. What is the purpose? What do they do differently?

Back when recordable DVD's came out there was two different standards. +R and -R. The first drives only supported one standard. However for several years now nearly all recordable DVD drives support both standards.
DVD +R has an additional cyclic check to minimize data loss.
no practical difference as far as you, the user are concerned. you just have to make sure you've got a drive that supports whatever format of disk you've got there
