Is there a difference between romanticising cowboy culture and having a romance with a cowboy? I for one would have to say that there is, but hey, maybe that's just me.

If someone romanticizes something, they usually admire or appreciate it. They think it's beautiful or fascinating. E.g. People romanticize the Eiffel tower and the aesthetic of the roaring twenties.

If someone is romantic, they act sweetly toward love interests and often make thoughtful gestures. E.g. buying roses for your wife or telling her she's beautiful.

Quite a bit.

Romanticism can be about other emotions. Just because one Romantic work is about love, does not mean all of them were about love. It is more abut idealizing a feeling, than love specifically.
