What is going on with my 1997 Buick Century?

I was driving home from work, and mind you, I live in the Tampa Bay area, so I made the mistake of leaving at 5'oclock, so it was stop and go traffic the entire way. Nobody in Florida knows how to drive. Anyway, my car starts randomly saying low coolant on and off, but the car is not overheating. When I get home, I hear this gurgling sound, and I locate it by the gas tank. I open the lid and a massive amount of heat comes out. I then check the coolant, and it is fine level wise, but I do need to flush it, as it isn't green anymore.

What "lid" did you open? The lid for the gas tank? or the engine compartment hood?
If heat was coming from the gas tank, you have a potential deadly situation. Be careful!

If the heat was coming from the engine compartment and Just because the radiator fluid "level" is ok does not mean the car has/is overheated/overheating. The possible causes are many so you need to have an expert diagnose it, not people on the internet.

if the CEL was not lit, and there's no leaks or noises from the drive train, then you have no worries.................check all fluid levels

You're making the mistake of thinking the coolant level is okay just by looking at the reservoir tank.
When the motor is cold open the radiator cap and then run the motor. Be prepared to add coolant as it will be low. The gurgling noise is the motor over heating. The temperature gauge is not accurate when coolant is low. Better find the coolant leak!!

I'd worry about an exhaust pipe heating the gas tank. The "low coolant" check light is telling you to check the coolant, yet, the level is fine. Maybe you are boiling the coolant, making gas bubbles that intermittently turn the "low coolant" light on and off?

Have a mechanic check the car, especially cooling system pressure. No part of the cooling system is near the gas tank. You need a motorcycle. There's never a traffic jam for motorcycles. I used to split the lane all the time at rush hour.

Get the coolant flushed and if the car does the same thing again, see a mechanic to check for a low coolant level sensor.

Check the oil see if it milky ... cracked block
