All of us take some type of inspiration from someone at some point of our lives

Yes for anything that involves pastry/baking. Most everything else I can ad lib. I've found copycatting doesn't always work. For example, jalapenos can sometimes taste unusually spicy or taste like freshly cut grass.

Copycat of a recipe? Not really, as I just use recipes for the Types of ingredients, not the exact method or amounts. So the dish will be a bit different than paying strict adherence to it.

Sometimes I am and love to use other peoples recipes and sometimes I can be original and experiment with some of my own ideas
