Why doesn't egg tempera rot?

It will rot if left in the liquid state for too long. I think it was originally made and used the same day, and once it's dry it won't go bad.
Vinegar was added to keep it fresh for several days, just a few drops. The acidity kills bacteria (which is why vinegar itself doesn't need to be refrigerated).
