In the US it would be "on", possibly "at". But on would be more common. Never "in" the coast. You can't physically be "in" a coast, that's impossible.

Depending on the context, all 3 could be correct.
"We are in the Gold Coast" - this would imply that you are inside "The Gold Coast". This could be a building, or something like a park that is enclosed.
"We are at the Gold Coast" - this says what is your location. It be indoors or outdoors, or a generic spot. I'm at the hotel. I'm at the large tree.
"We are on the Gold Coast" - this implies the Gold Coast is either a location you be on top of or board. You would say "I'm on the train" or "I'm on the boat" but not "I'm on the car" - that means you are standing on the roof of the car. You can also say "I'm on the mountain."
So depending on what exactly "The Gold Coast" is in this case, any, or even all, of these could be correct.

In Britain most likely "We are on the Gold Coast", Possibly "at". "In" would be unlikely, but I can imagine some Britons using "in".
Also you would need to specify which country, since Australia and the USA have areas called "Gold Coast". I assume you are not referring to colonial times before the 1960s when the modern country in Africa called Ghana used to be called "Gold Coast". If that were the case, then definitely "We are in the Gold Coast" would be a form commonly used by Britons.
