use "reunion" instead of "reuniting".

Both of those ways feel very old-fashioned to me in Britain, well over 100 years old. Both are distinctly not natural in everyday conversation.

I might say: "I hope we meet again quite soon - let's drink to it".

The idea of "giving a toast" feels much too formal for a group of friends discussing their future plans for travelling etc.

"Come. Let's toast our reunion."

You don't use a comma because it's two different clauses. "Come" is a sentence by itself.
