Will a GTX 1060 GPU bottleneck with Intel(R) Core i7-2600?

The 2600 is still a good CPU. You have nothing to worry about by pairing it with the GTX 1060.

It really depends on what you are doing with it. That CPU still has some impressive processing power for how old it is. Worst case scenario, the games you have with the highest CPU load will just max out the CPU and leave the GPU less then 100% usage. All you'd need to do is save up and get a new motherboard/CPU/RAM combo to further increase performance with that game.

I'd try looking for benchmark videos gaming with your i7 to see if there are games that can max it out.
