"quite" has two meanings depending on the word that follows. It can mean "fairly", a synonym of "rather", or mean "very, completely".

We don't use "quite" for comparison to avoid confusion, instead we use its synonyms.
1. when it means "fairly", we use "rather". (e.g. rather more interesting than)
2. when it means "very", we use "a lot" or "much". (e.g. a lot more interesting than)

quite--adv--completely; altogether:-He has quite recovered.I quite agree she was quite alone. So see that her watch is quite right, otherwise not quite acceptable.

more interesting是比較級形容詞,但副詞quite只能放在原級的形容詞或副詞前,而副詞rather則還可以放在比較級的形容詞之前:
1. ADV + adj/adv
I was doing quite well, but I wasn't earning a lot of money.
I felt quite bitter about it at the time.
It is quite clear that we were firing in self defense.
I grew up in rather unusual circumstance.
I had had an excellent dinner at a rather good local hotel.

2. ADV + compar
The reality is rather more complex.
As you can see, he did rather better for himself than I did.

你問的句子用的形容詞屬於比較級,所以空格裡只能用rather這個副詞。
以上例句及說明取自:
Collins Cobuild English Dictionary for Advanced Learners (第三版)
p.1258 quite
p.1274 rather
