Often it is thrown away

Nothing that has been served or brought to a table can be served again.
Pre made items that were prepared in advance may be used again. Burgers that may have been started can be broken up to make pasta sauce, taco filling, soup...
Steak can be made into soup as well.
The remaining meat loaf from last night can be made into meat loaf sandwiches for lunch or even served as meat loaf again. It just needs to be heated gently so it does not dry out.
The rolls can be turned into stuffing, croutons, bread pudding,
Some places will also donate leftover food to shelters or food pantry in the area. And in some cases staff may take some home or it is there for their next meal in house.

Restaurants serve the food until it cannot be served (when it spoils). They don't throw away good food. If there are leftovers from a special, then they will more than likely be frozen, to be used at a later date.

They throw it away. The amount of food wasted these days is unbelievable.

It depends on what it is.
NOTHING off anyones plate or sat at anyones table is saved. ALL of that goes into the trash. We would love it if you took it home as it hurts foodies hearts to toss all our good food.
The left overs in the kitchen are a different story. some meats and veggies are saved and go into the soup of the day some time into the future. Breads that never went out into bread baskets gets dried for bread crumbs to use for breading or in bread puddings or even for french toast or croutons.
Some foods show up as the lunch special the next day.
EVERY scrap of food wasted is money in the trash so a good chef is very good at not preparing too much extra.

They’re supposed to be disposed of. If safe food handling is utilized, staff can sometimes eat it if that’s the policy, and many times it’s refrigerated and used to create another item, like soups or side orders.

Some restaurants allow employees to take food home. Many restaurants throw out that food, because they are afraid of being sued if someone got sick if they donated it to say a food bank.

I think some restaurants donate it to feed underprivileged people. All restaurants should anyway.

A lot of them throw them out which is a crime. I used to sneak leftovers home too because it just kills me to have perfectly good food thrown away.
