English grammar question, please help, thanks very much.?

Sentences from Longman.
Principle 1 – gerund could be used follow hear -- Jenny could hear them arguing outside.
Principle 2 – infinitive without to could be used follow hear -- She heard Tom go upstairs.
What confuses me is what is the nuance between them and how should I make a make a proper choice?
Thanks for your help. I’m an English learner.

No2 could certainly (in Britain, at least) be said as "She heard Tom going upstairs". Possibly "...go upstairs finalises the "going upstairs" action, thus regarding it as in the recent past.

No1 has to have that form.

Note that I write from Britain. Americans etc might have different ideas.
