So first question is a semester here in my college considered to be a full year of the courses are 16 weeks long, 5 months? I'm currently on my second general education courses , I started back in January earlier this year it ended in May. Now it starts from August-December. And second question is if I'm going to be getting my associates degree in criminal justice will that be an undergraduate degree until I earn a bachelors or higher?

In colleges using the semester system (as opposed to being on quarters), there are 2 main semesters each year. The Fall semester is roughly from late August to late December. The Spring semester is from early January to mid-May.

Many universities also offer a Summer semester, in which a few courses can be taken.

it's a two year degree. an undergraduate degree is only a bachelor's degree. a graduate degree is a masters and higher.

as far as the academic calendar goes, just ask a counselor at your college. find out what a full year is normally, if they are on semesters, quarters, trimesters, and how many credits you need to sign up to be considered full time or part time student. every college is different.
