This probably boils down to a choice between doing what they want vs finding a way to move out and run your own life. However, very few 18 year olds can do this. At 18, most of us had no idea what types of expenses we'd encounter on our own, simply because we had no reason to worry about them.

When you say you plan to refuse to work there, just be careful with this. Even after you turn 18, you can announce what you will or won't do, but they still have all the power as long as you need their roof over your head.

The only thing I can suggest is try to compromise with them. If you've been contributing to the family's finances, explore a more fun job where you would make more and have more freedom over your hours. Then write this out so they can see you'd be able to contribute a bit more.

Finally, none of this is as unsual as you seem to think (except the part about having to get up every day at 5). Teens often help with the family business, even if it's not an actual "job". I know a lady who runs a house cleaning business, and during summers, her 2 teens work with her every day. They get some money for spending, but most of this is saving for college.

The only way you can truly avoid not working there is by becoming financially totally independent from your parents and being at least 18. Then you can move out and do whatever you want.

You will find that going to college and having to work sufficient hours to afford college and living expenses will be a lot more work than you are likely to put in now and you probably will have to get up as early every day. Unless you are good enough that you can get a full scholarship which will pay for tuition and give you a stipend large enough to live on.

I would suggest to go to college in a town far enough away from your parents that you can't work there unless it is between semesters. And if you find a better paying job for that time you don't even have to go home for that time.

Since I grew up in a still comparatively agricultural town, all my friends whose parents were farmers had to help working on the family farm even before 11, and I had jobs in agriculture during vacation times from 11 onwards too, so it doesn't sound that extraordinary to me. I did however not work during school.
