there are probably hundreds of different ways and thousands of recipes to go with those hundreds of ways.
Pies, soup, main dish, in bread, quick breads, in coffee creamer, (yes real pumpkin is used in home made coffee creamer) as a side dish, turnovers,etc, etc, etc. Pumpkin is a species of squash and can be used in all the same ways squash can be used.

pumpkin bread
bread pudding

ravioli

Pumpkin pie (Thanksgiving). Carving (Halloween). Pumpkin pasties (non-Muggles only). Pumpkin soup (how original). Pureed (baby food). Pumpkin juice (again, if you're a Muggle, you may prefer oranges). Dress-up (pretending to be pregnant). A term of endearment (I love you, Pumpkin!)

It's just squash. Cube it up and saute it in a butter with salt and pepper. It's not a very interesting squash IMO but it's squash.

here is the recipe you only bake the crust not the pie.
PUMPKIN OR CUSHAW PIE

Beat well in blender ;
2 cups - pumpkin or cushaw
( peel ,then cook on stove until
it gets soft, put small amounts of
water just so it doesnt burn)

- 3 -egg yolks ( use the whites for meringue later)
- 1/2 stick - butter
- 3/4 cup - sugar
1 cup - milk or (cream
& water)
1/4 cup - flour
dash - cinnamon and nutmeg

=== directions
cook over hot water until thick. pour
in crust shell. add 1 teaspoon vanillla flavor
let cool.

pile high with meringue.

1/2 teaspoon - salt
1 cup - all purpose flour
2/3 cup - shortening
1/8 cup - water
blend in shortening , flour until it looks
grainy, add enough water to hold together to make
a dough
bake until brown.
