Why we have to boil the vegetable? What's chemical reaction when we do that?

Most vegetables can be eaten raw. Corn on the cob can be eaten raw or cooked for instance.

You usually get more nutrition if cooked slightly.

Some veggies, like peas, turn into starch and diabetics then must limit their intake.
