Can you make good pancakes using Honey instead of Sugar?

You don't have to add either. You don't have to sweeten them as you'll be adding super sweet maple syrup or jam or nutella or other toppings...

Yes you can, and I love them. I use honey for a lot of my baking. Here is a super good recipe if you need one:

Buttermilk 'n' Honey Pancakes
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg, lightly beaten
1 cup buttermilk
2 tablespoons dark honey
Stir together first 4 ingredients in a medium bowl. Add egg, buttermilk, and honey, stirring until well blended.
Pour 1/4 cup batter onto a hot, lightly greased griddle or skillet. Cook 1 to 2 minutes or until top is covered with bubbles and edges look cooked. Turn and cook 1 more minute. Repeat with remaining batter. Top pancakes with Pecan-Honey Butter, if desired.

There's barely any sugar in pancakes so honey works fine.

I don't use sugar at all when making pancake batter so I guess I wouldn't be using honey either.
