How did God create the universe if there wasn't a universe for him to be there to create it?

Space and time are attached. So there is no "before" creation, because there was no time. I know it sounds like a silly cop-out, but that's how time works. Neil de Grass Tyson explains it pretty well. You should check out his podcast!

It seems that they believe that their gods can come from nothing and create out of nothing as well as life from the inanamate but if one removes the intellect from that belief they suddenly lose theirs.

You assume that without the universe there is nothing, so God cannot exist there, wherever "there" might be, but the fallacy there is that you assume that if there is nothing, then there can be no God. Nope. God is even when there's nothing.

We cannot see all that is; we cannot even deduce with confidence what most of it is, at even the most basic level. But all that is in this universe is the creation of God.

God is not a part of the universe; God made it; God was before it and will be after it is gone. Therefore it follows that one cannot see or even detect God with conventional instrumentation. Indeed, if we were able to view every bit of matter in the universe, we still would not see God.

Your tiny brain does not understand anything beyond physical matter.
Dont try to explain spiritual by physical means. It makes no sense to detect a spirit with a device measuring physical parameters.

He spoke it into existence. The Latin phrase is "ex nihilo", which means "out of nothing". I can't explain it, but I believe it.

Maybe you don't understand the concept of creating. It means to make something from nothing.

There was nothing at all except for spirit creatures. By God's force of his will, the physical universe and physical matter was formed.

Over perhaps millions of years, planetoids cooled into planets.

With Earth, the land was smooth. No depressions or ridges. That is why all of Earth was under water. Genesis 1:6 & 2 Peter 3:5-6 shows that water was divided into a water canopy above earth's atmosphere. This provided an insulating blanket for the planet.

Now, we are not told of life on other planets. Only this one. But we see the intense care God took to design life for here

Well there is the big bounce theory, which suggests that the big bang, is a product of another universe collapsing upon itself, creating an infinitely dense point, it then rapidly expands again, and this process repeats over trillions of years. It's basically a cycle of never ending big bangs.
