Subjunctive is a verb form or a set of verb forms in Grammar, used in English to express doubt, wishes. In "If I were you "the verb to be" is in the subjunctive.
eg:-If I were you=were=subjunctive;
eg:-If somebody broke my toy, I would have been very angry.
=eg:-I would have been very angry, should somebody break my toy
(would have been=subjunctive mood----compare Imperative; Indicative.)
I would have been very angry;
I would ask someone to compensate for loss Or buy a new toy from the toy shop.
(toy=favourite toys.)
(someone=somebody)
(doubt of being uncertain about angry, whether to wish what for compensation.)
If it was my sister, then I would give her a kiss and buy her one of that too.
If it was Justin, then I would kick his butts and demand that he pay me $1000.
If it was a stranger, I would just fix the toys.
