I play on XBOX One, and lately ive played a lot of open world combat games, including MGSV, Just Cause 3, Fallout 4, and Skyrim. What games should I be interested in buying?

Ghost Recon Wildlands comes out in about a month. You might like GTA V or Dark Souls 3. I'd definitely recommend Witcher 3. I'd pass on Mafia 3 and Watchdogs 2.

I personally like racing games. Forza motorsports 6 maybe. Destiny is also a good game

look at stores like Best Buy, Walmart, and Game Stop. I know from those three, if you buy a used copy, you can return it within a week and get a full refund. that is something to do when wanting to try new games, as you're effectively renting from the store if you change your mind.
other stores may only buy them back from you, often for less than half of what you paid.
even if a used copy is used at $55, instead of new at $60, it's better to have the option to return for a full refund within their policy, then lose more than half if you sell it back. even if you find it cheaper digitally, it's harder, if impossible to return them. just buy a hard copy used, then return it and get the digital copy if it's cheaper.
