Both are same except the colour and processing .Green olives are picked before ripening while black olives are after they ripen .
Green olives are soaked in a solution containing lye, then fermented in brine for anywhere between 6 to 12 months after being picked. The longer the olive is fermented, the less bitter and more flavorful it becomes. Green olives are usually pitted, and often stuffed with items such as pimientos, anchovies, jalapenos, garlic or onions. Black olives are also soaked in lye to lessen their bitterness, then cured in brine, but rarely stuffed.

The primary difference between green and black olives is simply the point at which they are harvested. Green olives are picked before they are ripe, while black olives are allowed to ripen on the tree. The difference in color is primarily due to the olive’s ripeness when picked, but is also slightly affected by how they are processed.

Other than that, there really isn’t much of any difference. On the minor side of things, due primarily to preparation, green olives contain about twice as much sodium as black olives, while black olives contain more oil than green. But in the end, the main difference really is just when they were picked.
Hoped it helped. <3
Ripe and unripe. Black are ripe.
Black olives don't go in martini's.

Black olives are made in a mixture of brine and lye and they have to be heated in the packing process and you can't do that in jars. Black olives were created in California. If you don't believe me google it I can't remember what show it was on. One more bit of information, the black one's are picked unripe and change color in the brine.
It depends Nature fermentation Black / Green
the green ones aren't ripe.....the black ones are..they are the same, just not at the same stage of maturity.
doesn't matter, they're both bad
It's all pink on the inside! (so they tell me).
Black ones have been allowed to ripen fully.
Oxidation in the olive growing. No taste difference, but due to chemical and physical properties the change in colour differs.
I'll pretend you posted in an actual food related section. As if you'd paid attention to wtf you were doing...
Other than colour.... mostly taste. I don't mind black olives. My wife prefers green. One is a bit bitter. One is not (or only very slightly). Try them both and see what you like.
(-‸ლ)
Obviously, one is green, the other is black.
One has more melanin like chemicals (which gives it a black colour) whereas the other has more chlorophyll (which gives it the green colour)
