How do you know what photos to use? Is there a certain category? Or what apps help you?

Use your eyes and your brain. Also look at any photos previously used by the organisation you are submitting to. It is unlikely that apps etc will do the full job for you.

Commercially, you do what it takes to please the customer. For art's sake, anything goes.
