Someone owes me money, but they can only take out a loan. They will only recieve the loan if they put me as a garuntour. They said they will give me the money straight away and take my name off as a garuntour and put their name as a replacement? Shall I trust them?

They can't "take your name off". They would have to refinance, but since they need a guarantor, I would bet they can't. They're going to pay you and then stick you with the loan.
