According to the US Bureau of Labor Statistics, employment in ME is modestly increasing (about 1500 new jobs per year), while employment in electrical and electronic engineering is not increasing at all. However, the bulk of the opportunities in either of these fields come about because of retirements. We have about 20000 students per year earning a BSME, and at least half that many earning a BSEE. Most students in both fields will be able to obtain jobs in their field (because of retirements), but some will not. The "out" for both BSME and BSEE grads is to learn as much computer programming as possible, as new jobs in software development vastly outnumber the new grads in computer science.
