cover the whole underlayment with the plastic, before we put in laminate flooring. And why? Will there be problems for our floor, because of this addition of plastic sheets.

the laminate underlayment should be all you need as a moisture barrier
no I would not add a layer of plastic on top, if moisture were to get in there it would be trapped between the two layers

There might be problems such as slipping of the wood
