The problem with cheap knives is just that-they are cheap. The balance is lousy, the blade is easily dulled, and they are never treated properly.
If you want an inexpensive knife, I would suggest what is called a White Handled Knife. These are knives that are sold in restaurant supply stores, maybe on Amazon as well. They are often used in professional kitchens and don't cost much. But they are razor sharp and will often hold an edge for a while under home use.
When you are ready for a good knife, then do your homework, but keep in mind that despite the various brands that Say they are the best, the best knife is the one that feels the Best to you in your hand. Weight, handle shape, blade size, there are lots of variables.
