How do I respond when someone says "what's up" or "what's good"?
I'm going to a meet and greet and the person I'm meeting tends to say "whats up" or "whats good" a lot. I don't want to say the usual response along the lines of "nothing" or "not much" because obviously I'm at a concert and meeting them, so that's not "nothing." Also I don't want to say anything funny/witty such as "the sky." So what should I say?

Just say enigmatically, "Oh you don't want to know" and leave it at that.
The proper form of greeting is How do you do? to which you should reply, How do you do?
It's just a friendly greeting. There's nothing wrong with answering "Nothing much. What's new with you?" If you or a close family member has started a new job or school or won the lottery you could mention it.
Just say "OK, and what's up with you?"
