I know that you can do this on an android phone but i want to be able to just click the power button and for my iPhone to open on its home screen or whatever app it was on last. Any ideas?

Not without a jailbreak. Apple are quite tight when it comes to security, so it never occurred to them to add that feature

I'm not aware of any feature like that. By like Anon said, your best bet would be to see if there's a jailbreak tweak available.
