When someone gives up, it means they lose hope and stop trying to get what they want. So the sentence means that she is only days away from that. You could also say "She will soon lose all hope of seeing her dreams come true."

I'm a big fan of the word "just". She is just days away from giving up on everything. But to be honest, it's fine the way it is.
