What do you think of carrot cake?

I like the cream cheese frosting more than the cake, but adding a little carrot cake to the frosting does make a nice combination.

It's up there with Italian Cream Cake - excellent.

don't like it with dried carrots. Glad I found out the food processor has a shred attachment. I can take or leave the cream cheese frosting though I do Iove that too.
