How is ginger ale not alcoholic, I mean, you heat sugar with yeast and close the container tightly, doesn't this produce ethanol?

Soft drinks are carbonated by adding carbon dioxide under pressure, not by fermentation.

If it's made traditionally with yeast to produce the "fizz" then it is alcoholic. The amount of alcohol will be small though.
