I don't like such a man. =我不喜「那樣的」人。（such a +單數可數名詞，對名詞的範圍加以限定）
I don't like such men.（such + 複數可數名詞，也有限定功能）

I don't like men. =我不喜歡男人。（複數名詞指同類的全體，因為未受到任何限定）

當我們用到such當determiner/predeterminer時，是在遙指先前所說過的那個人或事物（即加以限定）。

所以It was such a surreal experience to stay in an ancient castle for a night.去掉such後，就與前文脫節了，因為such可能指的是前文所提過的那個，或是說話者心裡所想到某個狀況（在做程度上的類比）。

就是差在語氣的強調 意思類似你想表達 “真的很” 特別
