they overprice healthy foods, make them scarce to find and they put too much cholesterol, fat and sodium in cheap foods that aren't healthy to begin with

Healthy foods in general aren't overpriced or scarce. They just take more effort to prepare than things that are nutritionally poor.

Shop sales. For example, if brocolli is on sale, buy it. Learn how to rehydrate beans. Learn how to cook with whole grains. Learn how to garden. Don't become acclimated to processed and fast foods. If you are vested in a mutual fund or pension one, it's likely you've invested in the food industry as well. Read the book below to appreciate capitalism and free market. Read the stock pages. Without a food industry, our economy would tank. Merely choose wisely as there's no conspiracy. It's just the market, supply and demand. Learn economics. It's fun not scary.

No they don't. They want money. Stop shopping there and soon other people will too. Shop at Costco or trader joes.

the market will bear what the market will bear

dont you remember those silly exercises you did in school math about how high the price must rise or fall before profits decrease

well - those equations have real world application

if as many people will buy an apple at $2 each as they would at $1 each (or in fact so long as the customers fall by less than 50%) - why the hell would they sell it at $1?
