I like to put olive oil or butter for just plain couscous. I also love a couscous salad made with couscous (dressed with olive oil or butter), feta cheese, cucumber, and red onion or shallot. It's delicious! :)

Roast tomatoes, peppers, courgettes, and a creamy cheese such as ricotta, with some vinaigrette dressing. Eat while it's warm.

anything but especially slightly obscure vegs like fennel and chicory i use for a bed and then mix the couscous itself with aubergine and capsicum with red onion after adding hot water for the basic.
