An easy meal for me is to boil some rice, and just as it is ready add 1/2 cup green peas and 1/2 of green peas and return them to the boil.
Reduce the heat and drain and return the rice and veggies to the pot and the pot to the element and turn the element off.
Poach a couple of eggs gently as you need to keep an eye on the rice. Add some black sauce like Ketjap Manis (sweet soy) Teriyaki etc.
Serve into a noodle bowl and top with two poached eggs.
Slash the yolks in opposite direction so the yolks will flow both ways

When I get to the table I will have a bit of a taste of everything and the just chop up the eggs and mix it all up.

Alphabets or Orzo (Rizzoni) are great as well. I have fooled my older brother twice to have him think it was fried rice.

This can be done without meat, but if you have a can of sardines, tuna salmon, chicken, or whatever else is at hand that can be added whenever you wish

You should cook the meatballs in the tomato based sauce and when it gets close to dinner time you can either cook the beans and potatoes or go to Applebee's and have the meatballs tomorrow night. If Applebee's is cheaper, that would be my choice.
