As a native English speaker? Both French and Italian, or any other Romance language. German (like Icelandic) is quite a bit harder because of it's heavily inflected grammar.

Italian would be the easiest, followed by French [because of grammar and pronunciation quirks], and German would be the hardest.

Learning a language is not easy. It takes hard work no matter what. That said, German is more similar grammatically to English, but French and Italian have more similar vocabulary. French and Italian are both Romance languages based on Latin, so they are about the same level of difficulty.
