What do you eat on Thanksgiving Day?

I was just curious about what other people eat. My mom always cooks a ton of food. We usually have turkey, ham, roast, ribs, seafood cornbread, dirty rice, red beans and rice, great beans, greens or cabbage, corn on the cob, macaroni and cheese, fried chicken wings, rolls, spinach casserole, potato salad, green salad, yams, sweet potato pie, pecan pie, lemon squares, usually some type of cake and tea cakes. This year my mom is going to replace the ribs with brisket. I'm from SE Texas, near the Louisiana border and both of my parents are from Southern Louisiana. We usually have gumbo for Christmas. Oddly, we never have cranberry sauce. I don't think I've ever tried it.

Your mother sound like mine used to be. I have 2 Thanksgivings, one at my brother's and one at a friend's. I have Turkey, mashed with turnip, gravy, stuffing and green bean casserole. This year I made deviled eggs and jalapeno popper for appetizers and apple turnovers for dessert. My brother usually has cake too. At the other I have roast beef and mashed with gravy and whatever veg they have. I make a chocolate cake for them. Your mom is a dynamo, that is more food than I can conceive of.

We keep it simple:

Deep-fried turkey
Dressing (that's what we in the south call stuffing)
Baked sweet potatoes
Green beans (not casserole)
Cranberry sauce
Pink fluff (gelatin dessert)

This year I'm making and/or buying to serve:

Turkey with grain-free stuffing
Grain-free tapioca starch rolls
Mashed creamy garlicky cauliflower/turnip
Gravy
Cranberry sauce (I hate it but everyone coming over likes/wants it so we are making some at my house)
Roasted butternut squash and veggies
Brussels sprouts
Asparagus green bean casserole
Mac n Cheese with Banza pasta
Salad
Sugar free apple pie
Sugar free pumpkin pie
Sugar free pecan pie
Sugar free vanilla ice cream

and after reading your question, I am thinking of making last minute sugar-free Lemon bars if I find the time. I love them and didn't think of making them for this holiday before!

We are not originally American but we love celebrating Thanksgiving since coming here and we love Thanksgiving foods. However, most of my family is on a diet all the time, LOL, so making healthier versions.
