I DID taste it during the process, however when I tasted a bit on the side of the pan it was hot and cheesecake is not good hot of course, so I did not like the taste. The suggestions are great, thanks so much and I am going to try one or two of them. It is for family too.

Are you putting anything on the top (like berries, or chocolate shavings, even whipped cream, etc?

If so, pick an inconspicuous spot that would be covered with the garnish. Scoop out a tiny bit with a small measuring spoon-- scoop down (dig a small deep hole) rather than across (don't make a big scar on the face).

When it's time to garnish it, simply stuff the hole up with whipped cream or something.

If you have already made it and cleaned the bowl without tasting anything, one way is to slice it in half, cut a sliver off each diameter edge to taste, then press the two pieces back together.

You could have tasted it BEFORE pouring it into the crust, now it's too late.

That it why their is something called a bakers dozen. If you cannot be bothered to make a new one you could make a small whole in the center and try it then fill it with cream, if you are desperate. However, if you're cooking for a family then it does not matter. Although, look is important in cooking, taste is more important than looks. :)

then make another cheesecake the exact same way and try that.

Slice it. Take a thin sliver to taste, then rearrange the slices to hide the gap.
