The definition of "finite" is the opposite of "infinite." This means that something is restricted, measurable, and has bounds and limitations.
When someone says that "death is finite," they usually mean that death marks the end of one's life and is the world's greatest equalizer. Everyone will eventually die one day, and it is for this reason that no human's life is inherently more valuable than another's... they are just different lengths.
I may be wrong, but I believe you are confusing "finite" with "final." Even if you are one of those people who think they will sprout wings and float to the clouds after they die, calling death "finite" does not correspond with the meaning of "finite."
