The scenery was breathtaking. Pulling air out of lungs = taking breath away. I suppose the part about God is a joke. There isn't any God, and if there were, She would have more important things on Her mind.
"How kind of you to" does not mean "what a kind you." It means "what you did was kind."

It's an unnecessarily awkward way of saying, 'It takes your breath away." You have heard that expression and understand its meaning, correct?

The reality of such situations is that you do the opposite - you gasp, sucking IN air, when you see something amazing.
