When a saturated (or concentration) solution is cooled slowly, large crystals would be obtained.
When it is cooled rapidly, small crystals are obtained.

Cooling rapidly would allow crystals to form everywhere in the container but slowly cooling allows the solution to become or approach supersaturation near the seed crystal and attach to the seed crystal.
