Here is a really simple and yummy recipe. It is called ganache, and can be used as a type of frosting for a cake, topping for fruit, or, after it is cooled, as fudge. You'll need about a pint of full cream (half and half can be used if you want to cut some fat) and at least two large bars of Hershey chocolate or some other high quality type of chocolate. I don't care for too sweet chocolate, but use whatever you prefer. Heat the full cream in a small pot. Be sure to stir it until you see small bubbles in the cream close to the edge of the pot. DO NOT make the heat so high that it causes the cream to boil. You could cause it to scorch. When it is heated, add the chocolate and stir until fully melted and well blended. If you'd like to add a flavor to your ganache (peppermint drops, vanilla, coconut, etc), do it now. Stir and remove from heat. If you already have a cake you'd like to frost, then place it on a wire rack that is held about a pan to catch any dripping ganache. While the ganache is still hot, pour it onto the cake or fruit, or whatever you'd like covered. Let the ganache cool and set. Enjoy! Any drippings that slip through the wire rack onto the pan can be recollected, reheated and used again. You can also pour ganache into a shallow pan. When it is cooled, cut into squares and treat it like fudge.

so creamy and so good :) for chocolate ice cream, just add a tablespoon cocoa powder (or chocolate milk mix). Or for bonus flavor add some cinnamon.

I can think of strawberries dipped in melted dark chocolate, or bananas dipped in melted dark chocolate, then dipped in chopped roasted peanuts and frozen (I put a popsicle stick in the bottom to make it easier to eat), or sliced bananas with a dap of peanut butter, then dipped in dark chocolate. For something without chocolate, I like the recipe for Fresh Berries in Peppered Balsamic with Vanilla Mascarpone from McCormick's website. I also use my King Arthur Flour Whole Grain Baking Book to make whole grain desserts, and the healthiest ones seem to be the cobbler type desserts (because there's so much fruit in them) and then the biscuit part is made with whole grains. You could also make sorbets out of fruit. There are also so many healthy cookbooks out there and they all seem to have lots of dessert recipes in them - take a look because we all have our favorite types of desserts!

And the healthiest most old-fashioned dessert of all - fruit :)

Yogurt parfait: Layer Vanilla or other flavored low fat yogurt with sliced fresh or canned peaches in light syrup topped with a bit of seedless raspberry jam and some granola, walnuts or wheat germ.

One or two ingredient Banana Ice cream: Peel and slice a ripe banana and cut in two inch pieces. Wrap in plastic wrap and freeze at least 4 hours or over night. Add the frozen banana to a blender or food processor. Process until the consistency of soft serve ice cream. You can also process a tablespoon or so of peanut butter with the frozen bananas or some frozen strawberries. You don't need any sweetener if you use ripe bananas or slightly overripe bananas and it really does taste like ice cream.

I guess this may be unique as it is a sandwich. Spread peanut butter and add sliced banana on cinnamon raisin toast. You can also add some Nutella on one slice of bread and the peanut butter on the other side, then the sliced banana goes in the middle. Good with thinly sliced apples also. Cut the sandwich cross wise into 4 pieces for a fancier looking dessert.
